Worried about Christmas dinner? Make a perfect dessert, light easy and even suitable for Vegans!

Light Plum Cake
delicious (and vegan, shhhh!)
Preparation Time: 10 min
Cooking Time: 30 min
Ingredients

300 g plain white flour
-
100 g sugar (unrefined brown is best)

100 g seed oil (sunflower oil or canola oil)

150 g cold water
-
1 orange - squeezed for juice and peel grated
-
1 desert spoon of baking powder
Method

Preheat oven to 180 C / Gas 4

Mix the water and oil with an electric mixer (or by hand)

Add the fresh juice of one orange, the grated orange peel and sugar. Mix well at a low speed.

Hold a seive over the liquid mix and sift in the flour and baking powder, a bit at a time, mixing gently as you go until the mixture forms a creamy consistency.

Prepare a loaf baking tin by lining it with baking paper, then pour in the creamy cake mixture.

Bake in the oven at 180 C for 30 minutes. Check it is cooked in the middle by making sure a thin skewer comes out clean.

Leave the cake to cool at room temperature on a rack, or serve warm!

Butternut Squash Soup
Keep warm with a delicious seasonal soup!
Preparation Time: 15 min
Cooking Time: 30 min
Serves: 4 hungry and helthy people
Ingredients

½ medium Butternut Squash, peeled, seeded and cubed

1 medium onion, chopped
-
1 medium carrot, chopped
-
1 medium parsnip, chopped
-
1 medium potato, cubed
-
1 stalk celery, chopped
-
1.5 litre water
Method

Pour the chopped onion, celery, carrot, parsnip, potato and butternut squash into a large pot and add the water. Set at a medioum heat and bring to the boil. Reduce the heat to low, cover pot and simmer 30 minutes, or until all vegetables are tender.

Transfer the soup to a blender, and blend until smooth (alternatively, use a hand held stick blender). Return to pot, and mix in any remaining boiled water to get the desired consistency.

Your soup is ready. Season with salt and 1 teaspoons of olive oil each portion.

Warm lemon water every morning
Warm lemon water is excellent in terms of hydration and diuresis without forgotten all the lemons nutritious properties. Nevertheless, its effects on metabolism and liver are not scientifically proven. This warm drink replaces liquids lost during the night, especially if the environment is dry and free from aeration. However, water should preferably be natural. Other beneficial effects concerns the temperature of the water, which being warm, is more digestible and can stimulate diuresis. The lemon is also an excellent source of vitamin C, with antioxidant function.
Remember that when we add lemon juice to the food, it improves the absorption of iron, especially in legumes and vegetables such as dark green leafy vegetables (spinach, swiss chard, kale, collard). The advice is not to use ready concentrated lemon juice, but to consume fresh lemon juice, using preferably organic lemons.
